Aunt Gertie's Noodle Kugel
Mix together:
- 4 large cooking apples: peel, quarter, remove core and slice thin
- 4 eggs, slightly beaten with fork
- Maple syrup: 1/4 cup (can use pancake syrup)
- Golden raisins: 1/2 cup
- Butter or margarine: 3 tablespoons, melted
- Vanilla extract: 1 teaspoon (real if possible) (I like to use several times this much)
- Cinnamon: 1/2 teaspoon
- Lemon juice: 1 1/2 tablespoons (real if possible)
- Orange juice: 1/2 cup (reconstituted frozen or fresh)
- Corn flakes: 1/2 cup crushed (or other flake cereal)
and prepare:
- Noodles: 12 oz pack of fine noodles, cook, drain, add to above mixture
Put the mixture in a greased casserole dish. Top with a mixture of the following:
- Corn flakes: 2/3 cup crushed
- Sugar: 1/3 cup
- Cinnamon: 1/2 teaspoon
- Chopped nuts: 1/2 cup (pecans or walnuts)
Bake at 325 degrees for 1 to 1 1/2 hours or until top is nicely brown. I often
have trouble with the nuts burning before the kugel is ready; in order to avoid this, I
cover it loosely with a sheet of aluminum foil for the first half-hour.
